The Ballerina Baker: Mommy Elsie’s Legacy
Fast forward to today, those continuing Mommy Elsie’s legacy alive are her children and grandchildren. Through our freshly baked goods, we proudly honor the memory of the Ballerina Baker, as we serve generations of Filipinos who in return have become their own baker chefs at the comfort of their homes.
HISTORY
FROM BALLET TO BREAD
Elsie Torrejon, the family matriarch for whom the bread and business were named, is also the chief baker and creator of the now heirloom recipes of Elsie’s Frozen Bread. A former ballet teacher whose passion for the dance spanned more than four decades, teaching and passing on the torch to her students for 20 years in her native Bacolod, and another 22 years in Manila, “Mommy Elsie” formulated the so-called “Elsie recipe” in the 70’s, having gotten the cooking genes from her mom Dolores who worked wonders in the kitchen.
When Mommy Elsie retired from teaching ballet in 1977, she was not content to just lounge in her home and be idle. Donning her mom’s apron, so to speak, she opened in 1978 with late husband, Ernesto, her own bakeshop which she called LC’s Yummies, eventually renamed simply Elsie’s.
Ballet is both a science and an art all its own. The grace and flow of movement — it’s either you do it perfectly or not at all. Mediocrity has no place in ballet. It takes a lot of discipline, hard work, and creativity to be able to dance the dance.
These are the same rigorous standards that went into the creation of each of Elsie’s heirloom recipes, and the same passion for perfection that goes into every piece of Elsie’s Frozen Bread. Just as expected, as the dancer and the baker were one and the same, after all.
“My breads are non-fattening and non-oily, as I use very little sugar,” quipped the then 80-year-old but still vibrant and indomitable Mommy Elsie. “Even diabetics can enjoy eating them without worrying. Just ask Sanirose Orbeta, a dietitian and nutritionist,” assured Mommy Elsie.
Since Mommy Elsie passed, his son Ernie and his family are now continuing the legacy of Elsie’s Frozen Bread, completing the first handover of a family business now into its second generation proprietorship. All the recipes remain intact. Not a single measurement was changed, not only to preserve the highest quality standards that Elsie’s Frozen Bread has since been known for, but more in honour of their energetic and beloved mother.

“The bread is parbaked and then frozen, ensuring up to three months of shelf life, unlike other breads in the market. The breads are easily stored in your home freezers. To serve, thaw the bread for approximately 15 minutes, then bake in a 350ºF oven for 10 to 15 minutes until it turns golden brown. The result is freshly baked bread at your own convenience.” Right in your own home.
